this is so quick and easy yet its as gourmet as baked alaska!
this pesto is so good it works best with my lobster stuffed raviolis. if you like the sound of that maybe i'll post that for you.
but i will tell you they are a lot of work cause i make them from scratch. but if you make enough of them you can freeze them for quick and easy but to die for meals.

ok ingredients go like this. i'm gonna try to give you the measured values however i never measure but it will be close and it will turn out just fine.

4 cups fresh basil lightly filled cups no need to pack them all down, guys!
2/3 cup olive oil
2 cloves garlic i quarter them add more if you dont have a date
1/2 teaspoon salt
1/2 cup walnut pieces, toasted
1/2 cup freshly grated Parmigiano-Reggiano cheese
fresh ground pepper
and about a pound of dried angel hair pasta

using a food processor put the basil, oil, garlic and salt. turn it on and off until everything comes together then let it run till the basil is finely chopped. stop the machine and scrape down the sides before adding walnuts and cheese. then run for like 30 seconds. pesto should be smooth. you can add a little more salt if needed also add a little pepper.
cook pasta before draining save a little of the water about a quarter cup drain the rest. NEVER EVER RINSE PASTA!!!!!
put the pasta back to the hot pan with the water you saved. add the pesto to the hot pasta and toss untill everything is coated. serve right away.
pour some white wine and add some of that cheesy garlic bread i saw earlier.
