 Salmon question

SO since everyone is super awesome at cooking I NEED a a mustard sauce for salmon...I tried all the cool recipe sites and they're like mustard sauce...on salmon..you're effing retarded...but I'm telling you I went to some up scale restaurant a few years back and they made almost like a Dijon mustard sauce to go over salmon and it's was amazing. Was wondering if anyone had any kinda recipes for that or tips or links or something to let me know i'm not crazy about mustard over salmon!

hmmmmmmmm...... I assume whole grain mustard was used...

Was is a "creamy" sauce? Or more like a gravy/broth ?

I know Japanese restuarants have a sauce over their salmon. It's more a sauce than gravy, Neon. Can't tell you about the taste since I just saw it on the table next to me.

Rooi does an awesome salmon filet with lemon pepper and butter.

I'm curious about the mustard sauce too. Sounds tasty!

Here's a cream mustard sauce we use at work;
1Tbls.Unsalted Butter
1Tsp. Minced Shallot
Pinch of Kosher Salt
Pinch of fine grind Black Pepper or white pepper if in house
Saute till shallots are translucent
add 1 Cup Heavy Cream
1 Tsp. "Dijon" Mustard
reduce till sauce thickens
taste and adjust flavors- more salt/pepper/or mustard

If you want to add some tartness a squeeze of lemon juice when the sauce is finished.
You can add garlic, but wait until the shallot is almost translucent to avoid the garlic burning or when the sauce is finished artichoke hearts quarters if you like.
They are a nice touch on fish.

It was creamy...I think Sinks nailed it..I'm going to try it tonight for dinner i'll let ya know how it all turns out! Thanks everyone!

So I Didn't do the recipe sinks put up there YET...but I did find something interesting out that if you just smear the mustard on the fish and crumble ritz crackers over that and bake it...it's amazing..I enjoyed it just that way...just food for thought

I know its an old post but I didn't see anyone post this recipe. I do creamy dill salmon in the oven. Just crack some salt and pepper over a piece of salmon. Then mix together equal parts mayo and mustard, a pinch of thyme and oregano, and mix together. Spread mixture over the fish and sprinkle dried dill on top. Bake in oven
