PostSubject: Looking for recipes!   October 18th 2012, 7:55 am

Hey Neon and any other good cooks in the invaders world! I do I lot of cooking for the residents at the group home I work at but I feel bad for them cuz they seem to eat the same things over and over (just cuz they don't talk doesn't mean they don't have tastebuds). I am looking for new and interesting recipes (e.g. something other than tuna helper, tater tot hotdish and mac and cheese with hot dogs). We do have a few residents who are diabetic so if anyone has a good recipe to fit a low carb high protien diet without breaking the bank I would love some suggestions! Thanks!

Shepards pie is easy to make. If interested. It's pretty much Mash patatos ground beef and veggie cassarole

Eh..Shepard's Pie is cheap but not carb and protein friendly with the taters...maybe sub the mash potatoes with mashed cauliflower. Also, Em I used this site when I was on the Atkins diet. I'm not sure how well it will be for you since you're feeding a few more than 2 people. Maybe you can get some inspiration from it though.

3 cups broccoli -- cooked and chopped, or frozen
4 ounces cream cheese
3/4 cup heavy cream
3/4 cup water
2 packages chicken bouillon
pepper -- to taste
4 ouncescheddarcheese, shredded
How To Prepare:
Combine Broccoli, cream cheese, heavy cream & 1/4 cup water in food processor. Blend until smooth.
Transfer mixture to pot add bouillon, pepper and rest of water (I added a
little more water). Simmer over medium heat. Add cheddar & stir
until melted.

Tuna Green Bean Casserole

1 can tuna drained
1 can green beans
4 oz cream cheese
1/4 c cream
1/4 c sour cream
salt, pepper, gralic powder
2 tbsp butter
3 tbsp crushed pork rinds (you can sub bake mix or soy flour)
3 tbsp parmesan
3 eggs
1 c shredded cheese

How To Prepare: Rub butter on a pie plate, and coat with 2 tbsp of the pork rinds. beat with beater the cream cheese, eggs, cream, sour cream, 2 tbsp parmesan, spices. fold in tuna and green beans. pour in pie plate, top with parmesan and pork rinds. bake at 350 for about 30-45 minutes, or until golden brown.

Meatloaf

2LBs Hamburger
3/4 c Grated Romano cheese or parmesan
1 Large egg
1/4 c parsley
1/4 heavy cream
1/4 cup tomato sauce or ketchup
5-6 strips of crumbled bacon (this is optional on the diet I used pork rinds better than bread crumbs or crackers!)
salt and pepper to taste.



Mix all them badboys together and if it's too moist add a bit more cheese or pork rinds. Shape into a loaf pan, cover with tomato sauce or ketchup. Bake at 350 for 45 minutes. Only carbs are the tomato sauce or ketchup!

Croquettes

  • 5 cups of ground meat (you can use turkey, ham, chicken or whatever your preference)
    1/4 onion finely chopped
    1/2 box corn starch
    1 can evaporated milk
    a dab of water
    1 tbsp butter
    3/4 cup Chicken Bouillon
    1 tbsp parsley flakes
    1/8 tsp black pepper
    2 eggs, scrambled
    Finely crushed breadcrumbs


Combine Corn starch, evaporated milk and water. Should be runny, strain to remove any lumps
Melt butter in large skillet, saute onion
Add chicken bouillon
Add in Corn starch mixture
Stir to combine
Add meat and continue to stir over low/med heat
Add parsley and black pepper
Cook until thick and sticks together in one large ball.
Let cool
After mixture has cooled, put in oval shaped balls approx. 3" long
Dip in egg, roll in breadcrumbs
Heat vegetable oil, fry croquettes until a golden brown.

Crockpot Beef Stroganoff

Serves 8 (You can easily double this)

2 pounds beef stewing meat, cubed even smaller

2 cans condensed golden cream of mushroom soup
1 onion, chopped
2 TBSP Worchestershire sauce
1/2 cup water

1/2 pound cream cheese

Directions

I saute my beef til browned with a little bit of veg oil. Then add to the crockpot.

Add onion, worchestershire sauce and water to the crockpot. Mix well. Cook on low for 8 hours or high for 5.

I chop up my cream cheese so it's easier to melt. Add to mixture and stir til melted.

Serve over egg noodles or rice!
